PARMESAN POTATOES Delicious, easy, and crunchy. Next time, I’ll add more cheese. There’s no such thing as too much cheese, after all. Ingredients: 2 lbs of red or gold potatoes ¼ cup of shredded Parmesan cheese 2 teaspoons of dried basil 2-3 tablespoons of EVOO Salt & pepper to taste Directions: Preheat oven to 400. Line baking pan with aluminum foil and lightly oil. Cut potatoes into wedges. Mix potatoes with other ingredients in bowl, making sure potatoes are fully coated. Bake until browned, about 45 minutes to an hour. Regularly flip potatoes so that cheese does not stick to pan. If you don’t turn them, potatoes will end up mushy. -- source link
