Healthy Chicken Sausage and Spinach - recipe under the cut2 cups Uncle Ben’s Ready Rice – Long grain and Wild Rice: Whole package approximately 2 cups. You could lower your calorie count by boiling your own rice – I’ll be honest, I was going for crazy easy.2 diced Al Fresco brand Smoked Andouille Chicken Sausage – I removed the skin so my calorie count in actually a little lower than listed. So why did I use sausage? Because I used the fat in the sausage to sauté everything else – no need for added butter or oil6 cups uncooked baby spinach4 diced shiitake mushrooms Seasoning: garlic and cracked black pepper (I use a dried garlic that doesn’t add in any salt – this also means about 4 calories)Lemon juice – add about a 1 ½ teaspoons of lemon juice when you notice your pan getting a little dry. It adds an awesome flavor – without adding calories This creates two meals at about 360 calories apiece. To cook this fabulous meal, you’ll only need 1 skillet (medium to large fry pan)Start by putting in the diced Andouille and the mushrooms. When you notice the bit of fat in the pan, start putting in your spinach. I pulled the meat/shrooms and first round of spinach when the spinach was good and wilted. Then, sauté the rest of the spinach remembering to add in your lemon juice.Serve it over the rice – and devour the heck outta it. -- source link
