“Excellent Menu for Inmates of P.C.,” Kingston Whig-Standard. December 23, 1930. Page 04.—-The Christmas Day menu at the Preferred Class Penitentiary [now Collins Bay Penitentiary] will provide the inmates with three special meals and a number of extras. The prisoners will not work on Christmas, but an entertainment will be provided for them during the afternoon.Starting the day with a breakfast of cream of wheat, bacon, and eggs, coffee, and bread and butter, they will be treated at noon to a special feast. Cream of tomato soup opens the menu and this is followed by roast pork and apple sauce with creamed potatoes and creamed green peas. Plum pudding and mince pie will be the dessert and a butter sauce is provided with the pudding. Breader, butter, and tea will conclude the mid-day meal.The supper menu is also a special one. Liver and onions will be the main items on the bill of fare and the vegetable is creamed corn. Iced sponge cake and preserved cherries will be the dessert, and bread, butter, cheese, and coffee will be included in the staples. Milk and ice cream will also be served.Several extras have been provided for the men. Oranges, bananas, apples, mixed candles, nuts and ice cream will take important places at the noon and evening meals. The staff at the P.C.P. are endeavoring to give the men a good Christmas not only in the menu but in healthful and interesting recreation. -- source link
