Puntarelle! What a bizarre and wonderful vegetable. When I visited @camporossofarm they explained that the heart that we shave and eat comes about when the plant bolts. If it bolts too fast it won’t form a proper heart. I love that humans have figured out how to control a plant’s bolting process to make a delicious salad. This one was dressed with anchovy, garlic and lemon. -- source link
