nocookbookneeded: I have the hardest time coming up with good lunches to take with me to school, so I did a little experimenting on my day off today. This is a smashed chickpea wrap, meant to give you the same sort of comfort food goodness of chicken salad or egg salad, but better for you and vegetarian or vegan. I took one can of chickpeas and drained and rinsed them, then mashed them with a fork. I aimed to have no full beans left but I didn’t want it to be totally smooth. Then I added 3 tablespoons of just mayo chipotle flavor (don’t freak out, this makes lots of servings) which is a vegan mayo substitute that I actually like more than the “real” thing. I diced up about ¼ of a red onion and tossed in there then seasoned with a little salt and pepper. If you use regular mayo without any extra flavor to it you might want to add a kick of spice to make it more interesting. This all made me a Tupperware full of the mix, and I just spooned some on to a tortilla filled with greens. Super tasty and it’ll make a great thing to have prepped for the week. -- source link
