July 2016 - Veg*n Homesteading / Frugality - Vital Wheat GlutenSeveral years ago I bought a giant bag like this off of Amazon for about ~$104 USD. It’s lasted me until now, although to be fair I didn’t really perfect my baked seitan recipe until this past winter.Well they keep jacking up their price on Amazon, last I checked it was over $124. Unacceptable. Fortunately this was on ebay for about ~$70 USD including shipping.This bag of 50 lbs of vital wheat gluten is 75% protein (aka 37.5 lbs of protein or 17 kilos). It’s the cheapest form of protein I know. Obviously this does not work for anyone with any sort of gluten issues.I actually like to store most of this in our deep freezer for long term storage, just to keep bugs out and to keep it fresher. A smaller container is left on the counter for making batches of seitan.One great thing about seitan is that it can be frozen, and reheats easily.Since I do a lot of manual labor, I take my protein intake pretty seriously. It’s actually one of those things that I don’t think enough veg*ns take seriously enough. It’s similar to soy in that it takes up other flavors well, and has been made for so freaking long there’s a huge culinary history/lineage to it.Anyway, I expect this to last me at least a year, which for $70 isn’t bad for meeting a lot of one’s protein requirements - perhaps about 60%. I do eat lots of beans of course - but seitan has a protein density, a deep satisfying “belly fillingness” to it - reminiscent of steak. I suspect it’s one of those things that people tend to miss and part of the reason most folks don’t stick with a veg*n diet for very long. -- source link
