maywebe: Black Lentil Brownies - easy to make and full of protein! 1 1/2 cups of your favorite GF flour mix (I used sorghum, tapioca, brown rice w/ ½ tsp of xanthan gum) (GF flour is optional so you can also use whole wheat flour)1 1/4 cups cacao 4 tsp instant coffee powder (optional, but it’s really good =)1 tsp salt1 tsp baking powder1 1/2 cups chopped walnuts½ cup of vegan chocolate chunks (optional: i used enjoy life semi sweet) 1 can of black lentils, drained and rised (you can also use black beans)8 dried dates1 cup of water1 cup of agave (I like my desserts less sweet so I’d recommend adding more to personal taste)1 tsp vanillaDirections Preheat oven to 350.Combine all the dry ingredients together in a large bowl and set aside. Drain and rinse the lentils and puree it in a food processor with pitted dates and water. Add agave and vanilla to the puree mix. Finally, combine the dry and wet ingredients together. Add more water if the batter seems a little dry. But keep in mind that the lentils and the dates will make the batter firmer than your conventional batter so don’t mistake that for dryness. Bake for 25-30 minutes! These brownies are moist, dense, soft and AMAZING! Protein-packed, delicious snack! -- source link
