Mashed Cauliflower: 2 heads of cauliflower chopped and boiled until very soft, around 30 minutes. Squeeze as much water out of the cauliflower as possible. Add 1 cup HWC and half a stick of butter, plus salt to taste. If you have one, use an immersion blender to give it a light fluffy consistency. Meat Mixture: Melt a tablespoon of coconut oil in a large pan on medium high heat and add a large onion. Once the onion is translucent, add 1lb ground beef and 1lb ground pork. Season the meat with your choice of seasoning. I used plenty of salt, cayenne pepper, paprika, and taco seasoning. Once the meat is browned add a green pepper (optional) to lessen the sugar and raise the nutrient content you can also leave out the pepper and add broccoli/asparagus/more spinach. Once the peppers have begun to soften add 2-3 cups of spinach. Once the spinach is wilted drain some of the fat from the pan before adding the mixture to the casserole dish. Assembly: Spread the meat mixture so it covers the whole dish. Layer the mashed cauliflower on top, being slow and deliberate so you don’t unearth the meat. Sprinkle an 1/8 cup of parmesan on the top and add some salt/cayenne pepper if desired. Stick in the oven at 350° for 25 minute. Enjoy! Let me know how yours turns out. -- source link
