Accidentally Delicious Oatmeal CookiesServings: 30-36STUFF1 cup unsalted butter, softened1 cup packed brown sugar½ cup granulated sugar2 tsp vanilla2 large eggs1 tsp baking soda1 tsp salt1 ½ cup all-purpose flour2 cups old fashioned oats1 ¼ cup sweetened coconut flakes2 4-oz bars semi-sweet chocolate, cut into ½-in chunks (or choco chips)1 cup coarsely chopped toasted pecansSTEPSPreheat oven to 375 degrees.Beat butter, sugars, and vanilla in large bowel with electric mixer until fluffy. Beat in eggs, baking soda, and salt until blended.On low speed, beat in flour until just blended.
