this is what happened to the lemons: i tied the seeds up in a piece of cheesecloth and let it and the sliced fruit simmer in not-too-much water until everything was very soft, waited for the bag of seeds to cool off enough to touch and then squeezed all the pectin out of it and back into the pot with my hands (it is slippery in texture and extremely sour), added only enough sugar as was necessary, returned it to a boil, and left it there until it gelled. this year i wanted to make more sophisticated marmalades, but sometimes i think that probably means knowing when to just leave the fruit alone. -- source link
