As much as I’ve spoken about kombucha on my page, one thing I definitely don’t talk about enough is the history + benefits of this fermented tea drink ☕️ According to a journal article from Comprehensive Reviews in Food Science and Food Safety, kombucha originated in Manchuria in northeast China, ‘where it was prized during the Tsin Dynasty (“Ling Chi”), about 220 B.C., for its detoxifying and energizing properties’ (Jayabalan, Malbaša, et al.). How did it get to the western world? The article confirms that kombucha ‘found its way first into Russian… and then into other eastern European areas, appearing in Germany (as Heldenpilz, Kombuchaschwamm) around the turn of the 20th century.’ Among a slew of other health properties + benefits, kombucha is great for digestion and a good source of antioxidants + healthy bacteria. Plus, making it at home is a fun foray into fermenting, it costs pennies to make (store bought kombucha is a scam ) and you can totally customize the flavors to your liking. I’m *personally* a fan of the plain stuff so I tend to stick with it as is Are you doing any fermentation projects at the moment?
